The black fungus is like the mouse ear mushroom. It is just a kind of natural mushroom that is dried for easy transporting and storage. When you soak in the water, it gets big and turgid again. It doesn't add a lot of flavor but adds a lot of crunchiness and volume. You could use any other kind of dried mushrooms or fresh ones, but don't use canned mushrooms for this recipe.

1:34 Click on that number. Can you see the way I rock the knife back and fourth? It makes it easier. It's also easier for me to feel the knife against the back side of my left hand fingers as I'm holding things like ginger or carrots, so it's more safe. Never lay your fingers flat on the cutting board like the vegetables... you must keep your food holding fingers pointed down towards the cutting board on top of the food. You will never cut yourself this way. Thanks for watching!
