I have a book about Zuni Indians where they cooked like this. They used three. One for drying corn, one for baking, and one for meat. I'm not sure how much of the fire is supposed to be left in the oven for bread after the initial heating. I think it got swept out fully (including coals) and they used an adobe door with some wadding around it to hold the brick heat inside. There was one one trick where a handful of corn meal gets thrown in on the cooking surface. If it blackens it's too hot.

@oceantrolls73 Yah well the bread went in too early but that is all part of the joy of experimenting with the new toy. I love my oven and use it at least twice a month for baking roasting drying and preserving. I now have a roof over it so that I can get even more use out of it.
