I like how he uses packaged stock because most of us dont spend 6 hours making stock. He keeps it real.

Love that he seems to use paring knives for 99% of his prep. I like to pretend it's an 8'' or 10'' chef's knife and that he's a giant.

yep a lot of ppl disbelieve that he used stock cubes as a seasoning in michelin star restaurants but he did.
