As far as the B chord goes, you don't HAVE to bar the first and fifth strings to make it a B chord. It's still a B without the fifth string. ;) It just doesn't sound as full as it would with it (All that chord theory crap pays off sometimes). Try that out man, but keep stretching your fingers.
