Just finished making this with a couple of tweaks. I used green bell pepper instead of red, white onion, added some toasted cumin seeds, and 1 tablespoon of soy sauce. For veggies I put in some peas (yum, highly recommend!) and steamed broccoli. It's absolutely delicious! Not exactly Thai, but very good regardless. Thanks for the inspiration!

I would have used yellow or orange pepper and yellow onion. The basic Idea for this recipe is OK. I don't really think its got enough Thai influence to have it in the name. It would have been so much easier to put the noodles in the pot of sauce and mix it up before serving.. OH Cooking with Dog is Japanese.

I am eating this right now. It's awesome! One of the best mac & cheese I've ever tried, considering there is no vegan cheese in it. I highly recommend adding veggies with the pasta.
