  • It's getting cold here in Washington DC. I've always wanted to make this since 2 years. But never could cz I was living in a country where you couldn't find the Korean chili powder. Now I'm in the US, so i bought the Korean chili powder ( couldn't find the Kosari).... IT turned out sooooooooooooooooooo AWESOME......today is so cold too... and this soup is just perfect for it !!!!! THANK-YOU Maangchi..

    I like a variant of this in a more traditional stew. Coat stew meat in flour, salt, pepper and cayenne pepper. Braise meat in sesame or olive oil...add garlic just before adding broth. Add traditional vegetables, red wine and any amount of hot spices and/or vegetables depending on taste.

  • Kosari! I never knew the Korean word! All I knew was that it was Fern Shoot. I can buy it at the Korean Market. All my life I LOVE it! It has a beefy flavor. I think some people refer to it as "Fiddle Fern." The soup looks so delicious.

  • Don't worry about dried kosari, just skip it or use more mushrooms. It will still be delicious!

  • Thanks for sharing this recipe. Juk Gae Jang is my favorite Korean dish. At local Korean restaurants, they serve this soup with clear noodles. "Kumsa Mee Daad" :)

  • maangchi u are awesum! yuk gae jang is 1 of my favorite korean dishes. i was stationed in korea in 1997. take care u are very pretty.

  • hi maangchi, is "toran" the same as chinese celery? is it similar to regular celery but skinnier and the smell is stronger?

  • No, it's not Chinese celery. Toran is taro. To make more authentic yukgaejang, taro stems are used instead of celery.

  • You can skip kosari (fernbrake). Make your yukgaejang with beef and lots of green onions. It will still be good!

    Just found your youtube channel...really enjoy your cooking. Was wondering if this recipe can be used to make Kam Ja Tang (Pork Bone soup). Can't find any recipes on the internet. What is the difference between using the hot pepper powder vs the paste?

  • for this yukgaejang recipe, you will have to use hot pepper flakes instead of hot pepper paste. If you use hot pepper paste , it will make the soup thick and give some hot pepper paste's strong flavor. Kamjatang recipe is different from this recipe. I'm going to post kamjatang recipe someday.

  • You made me look up what cayenne powder. : )

    If it's only available, why not? Don't forget to fry the powder with oil before pouring stock into the pot.

Ingredients seem similar, but I don't remember having onions in the yukgaejang I had at the restaurant. Did I do something wrong? I followed the recipe exactly. Is it normally like this?

  • Welcome to Toronto! : ) I used to go to "Bookchang dong soondubu" restaurant and "Jin mi rak". The restaurants are in Korea town near Christie subway. Think about me when you eat food there. Bookchangdong soondubu serves very delicious soondubu jjigae, and Jin mi rak restaurant serves good and cheap samgyupsal (pork belly)with lots of vegetables.

    The 1 thing i dont like about yuk gay jang is how long the green onions, kosari, and meat is. They feel like they're noodles so i always slurp them :P.

    I live in a very small city and we do not have many asian ingredients. I was wondering : is the hot pepper powder the same as chili pepper powder? I live in Quebec and sometimes, the translation from English to French is totally different...so the ingredient's names are changed.

  • I think so, red hot chili pepper is hot pepper flakes or powder. In korean, it is called "go chu ga ru". Check out my website and visit my ingredient blog. I posted the picture of hot pepper flakes there. Thanks

  • Hi,Ms Maangchi, can we use chicken/pork instead of beef?cause my family don't eat beef. and should we boil the chicken/pork for 30-40 minutes as well with the onion inside??tq

  • yes, you can replace beef with chicken. We don't use pork to make Yukgaejang though.

    Cook chicken for a long time and take all meat off the bones. Then tear the meat instead of using a knife and set it aside.

    Put all vegetables in the stock and boil it. Just before serving, you can add the chicken meat. Good luck with your cooking!
