You can use any move you like to get the side dash-cancel effect, I'm using the standard roundhouse here but please experiment using the right-analogue stick to cancel the animations of many moves.

Against all the fat men you can TOTALLY destroy them by forcing the guard break and then using the "Side-Kick Trap". I use the sequence of - PUNCH PUNCH BREAK, PUNCH BREAK - repeatedly until I score the guard crush. Once you crush, throw a Side-Kick with the enemy's back to the wall and then cancel and repeat with the forward evade - they just cant do anything about it! XD
