  • @romesaXD Yes, this is great for sandwiches; just remember to squeeze the juice out of the cucumbers, so that it is not soggy in bread.

  • This looks fabulous. If you did need to thin it down, would sour cream work just as well as mayonnaise?

  • Wouldn't it be easyer if you first cut the cucumber in half and remove the seeds with a spoon and than grade it?

  • Well I learned something. I was thinking Benedictine would involve eggs (Eggs Benedict, I guess lol). Also, it never ceases to amaze me how far a little drop of food coloring goes! Love your outfit too, Betty. Great vid, I'm absolutely making this. 5/5

  • This is a great dish for a party. One recipe's worth makes 1 1/2 cups, so just go from there in deciding whether you need more than one recipe's worth. (It is very popular!) Thanks for your lovely comment!

  • I have NEVER, ever seen this type of spread on the West Coast....maybe I missed it in the cases, but I don't think we "do this" here. I think it would be wonderful as a sandwich spread for little finger sammies when doing a formal tea. Thanks for sharing this regional speciality. --Jill, Oregon

  • I am surprised that this spread is not well known on the West Coast! I never thought of it as particulaly Southern! It is great, and I hope you enjoy it! It is really great on white bread as a sandwich. I have a video on Benedictine finger sandwiches. I make them round, using a biscuit cutter for the bread--they are beautiful!
