  • @aashimagrover did u just say fat-free ????? This is indeed one of the best indian desserts but this is far away from fat-free....they have an entire tub of condensed milk...ricotta cheese... so it probably has more than 1000 calories...if not more.

  • @nazarmba : Yes, you can. Cook it in a non-stick or a heavy bottomed pan on low heat and keep stirring....

  • @arpanasunilkumar : You will have to cook the milk down and make it into koya/mawa and that is the other way of making this sweet. That will need a different recipe and method of cooking.

  • This recipe is good, ill try it but I've used another timing chart.

    An easier version: 14oz condensed milk (1can), 14oz ricotta cheese. Follow the timing as... 5 min(uncovered)....4 min (uncovered)...3 min covered. Add 1/2 tsp cardamom powder & 3/4 tsp rose water. set n top with nuts.

  • @abcdindian1: Yes, you can do it on the stovetop - use a heavy bottomed pan and cook on low heat stirring continuously.

  • @innocent1221 : Sorry, we somehow missed your question - sorry, there is no substitute for ricotta. You will have to make this the regular way. Boil down milk and cook till it thickens....

    Awesome recipe ,But mine was bit brown in color in just 12 minutes cooking process. So I just didn't bother cooking it any further.

    But the taste was pretty much what we use to buy back in India.

    This is my dad's favorite sweet ... I kinda impressed him today..lol

  • @kormaroad : Sometimes the color of the Condensed Milk varies from brand to brand. As long as it tasted good - you are fine :)

    let me tell u ricotta cheeze is made by the left over water of ....cheeze........

    Ricotta is Italian for "recooked" because it is made by "cooking" whey.

    Ricotta is produced from whey, the liquid separated out from the curds when cheese is made.

    Yes you can, but it really splatters a lot so stirring is difficult.

    Ricotta cheese is made similar to paneer but it is not as firm. If you are in the US, it is available at most grocery stores next to the sour cream, cottage cheese, etc.

  • Hi Hetal & Anuja I need to make the kalakand but its double the quantity so how abt the mins should them be same or double the mins..it looks so yummy can wait to try ...

  • @aquaneel : For microwave cooking, doubling quantity does not mean doubling time (unless you are making 2 batches)! It is approximately 1.5 times the time BUT keep checking (when you take it out to stir).

    Our suggestion: if you are making it for a party, we do not recommend experimenting. Make the double quantity but in 2 batches.

  • Hi ladies hope u r good... i tried this kalakand the taste was good.. like burfi the same thing my friend also did but the taste was very good like how we buy in India sweet bavan.. we used same condensed milk n ricotta cheese.. i was wondering how the taste was different?? we need to use ricotta orginal or ricotta partly skimmed milk cheese?? which one is good pls suggest me...so tht next tym will tey with tht ..     We used original ricotta cheese but the part skim should work as well.

    You cannot use any other kind of cheese because it will melt. Ricotta has a unique property in that it crumbles as it gets heated instead of melting. You would have to make it the traditional way...

    I made this recipe today. Followed your instructions exactly, but my microwave was totally splattered. Is this normal? I thought this recipe was precisely for the reason that there would be no splattering! Anyway, came out tasting great at the end of all of the exercise! Just wanted to share with you my experience.

  • Oh nooo...yes, that is why we did it in the mircrowave :(

    Was the dish deep enough? Maybe next time increase the covered cooking time a little and see if that helps.

    Our Microwave wattage is 1100 watts...just FYI.

  • Not much difference tastewise! But be very careful, this mixture, when cooked on a stove, really splatters everywhere. Sometimes, little pieces fly off and land on your hands or arms causing burns (so we have been told). Thats why we opted for microwave cooking.

  • It is good to refrigerate after the pieces have been cute and will stay good in there for 7-10 days.

    Regarding freezing, we have never tried it (it finishes so quickly) but if you do , please, do let us know.

    This quantity makes about 20 pcs.

  • It has a texture similar to fudge but obvs it hasn't got a chocolate taste. It is divine!

  • that didn't really look like ricotta cheese for some reason. Where do you buy Rose Water/rose essence?

  • You can buy rose water at a middle eastern or Indian market. It's lovely to put on foods and in hot teas.

  • @Venatrix99 u can also check your markets or like health food store or organic store but def. u will find in an indian store or middle eastern store as the other person said

  • Instead of using Rose Water can you use Vanilla?

  • @Diva63113 no you can not because the rose water is wat gives it that indian sweet taste. i never heard anyone substitute for vanilla.
