axoll- yeah, leave the top off 65-75% so that dimethyl sulfide evaporates and doesnt leave a shitty corn starch taste in your beer. scooping off the 'hot break' is a good idea, too. dont forget to sanitize your counterflow chiller.
great videos all six of them.....one question :when boiling I thought you were supposed to leave the top off , there is a chemical , I cant remember what its called, that is supposed to boil away otherwise it is going to remain in your beer and change the flavor.

Great video, good information. I thought you presented the information well and discussed the reason as to why the step is being performed.
If you get a chance, you gotta try some of the brews from San Diego, we have a rich brewing community here as well.
I will be definitely be referring back to these videos as I progress along in my own home brews!
