@ssansa with agar agar you'll obtain a "fogged" solution, all with the same density,while like this you'll have a densifyed shell with liquid content!

the consistency depends on how long you let them sit, the longer they are in the bath the thicker the skin. also this is using alginate and a calcium bath, but agar agar and locust bean gum dripped into cold oil works better. also the height you drop the liquid from determines the size of the sphere. higher = smaller.
