There is a person in the video that is type 1, as I'm sure Shanti mentioned to ya. Your doing great! Glad this little challenge between the two of you is helping both of you guys!
Usually she isnt wrong - but for Xanthan gum she is - Cellulose gum is extracted from wood, not Xanthan.
