Yes, the landing gear locks when folded and you can also deploy it completely. I have noticed it becomes slighty loose over time, though :-(

The bottom wing can lock into the main wing, and when you press a piece, it deatachs and stays vertical. You can lock it again into the main wing then.

Yes, there is a lot of empty space inside the hull, behind the cabin. You can add a proper floor and many things inside.

The horizontal ramp in the back can't move, the door do open to store things inside. Keep in mind that this "flying brick" was originally a cargo ship, or a hauler.

Yeah, there's a cockpit where you can seat the minifigs and put the lightsabers, but nothing else. They could and should have worked the interior more. There is room for it.

Nope, you can't, the 7680 is a big model, but not big enough to get anakins jedi starfighter inside it. You could do it with some modifications on this model, though.
