For anyone interested...hotter jalapenos can be bought when the heat of summer stresses the plants. Heat stressed plants will grow jalapenos that have light brown/somewhat hairy streaks running the length of the fruit.

@datacash hey just saw your question and the jars Chef John used in this video usually are called "mason jars" and the brand name one usually finds in the grocery store is called "Ball or Kerr" jars. You have to purchase the jars, then separately the lids for sealing them if you are planning on using a proper canning method.
@TtheAnimal Jalapeños don't have enough spice to burn your hands with the oils unless you are super sensitive. They will burn your eyes some what, but not too bad. The only ones what burn your hands to an uncomfortable level are like thai chilies, or habaneros. Something of that magnitude. If you want you can always were powder free latex gloves.
This is why I like your recipes. Fresh and so easy. I want some now! I don't own much pickled stuff. I believe that I have a few Bread and Butter pickles left in a jar in my fridge from Christmas. (Store bought). I crave the heat. Oh, I have some corn relish as well! Can you show us a recipe on how to make corn relish? No pressure. Hot dog season is near us.
Word of warning... if you have never sliced fresh jalapenos before (or any spicy pepper for that matter) please please please wear gloves before you handle them. Even whole and unsliced they can burn you. Some people can use regular latex gloves like a doctor wears, but for those of us sensitive to the burn, a pair of clean yellow dish washing gloves are needed.
You may think I'm over exaggerating, but when your hands are literarily throbbing in pain by the end of the day, you will understand.
I hope your wife didn't feel the burn later. A guy did that to me once, it killed the romance lol. Hotness sticks to your hands even if you wash them lazily like that ass.

@YoBootyStinks I don't taste it at all just the heat of the pepper. (cut a tab bit thicker on a bias) 1. boil jar, let cool. (ratio) 3/4 vinegar 1/4 water, more salt than sugar. boil to dissolve, cool, combine, seal.
@YoBootyStinks ive never had that problem i boil it because im re-using jars such as a tomato sauce jar. its only for a few seconds (top and jar separated). i think the only way possible for it to break is if your have the lid on allowing pressure to build inside the jar. (^^tad)
