The more mature the coconut, the more oil/fat it has in it. I highly recommend reading up on coconut oil. It's amazing stuff! xx

To make coconut milk from a young coconut, blend the water and flesh. It will taste different to the mature coconut milk but definitely yummy! Then make the chocolate smoothie the same way. xx
Yes. The young thai ones are the babies and the brown hairies are the grown ups. The babies start out full of jelly. The jelly starts to solidify around the edges of the shell and turns to yummy sweet/salty liquid in the middle. As the coconut matures the 'meat' at the edge thickens like what is in the video. xx
