You can use heavy whipping cream (real cream) 33% or more and it will whip up wonderfully into very stiff and pipable cream. Just make sure not to overwhip or it will start to separate and no longer be smooth.
You overwhipped the whipped topping that's why it was harder to smooth it out. If you whip it to a point where it's stable but not hard (as the one you have here) it will be much easier to make it super smooth and it's not goin got have the "bubble holes". Use a special scraper, and that will make it super easy to make it smooth (it can be just a sturdy metal square, with an even side).
I used the whipped topping for the first time last week and it made super smooth sides. I was truly shocked
@ebonybardell if you make sure your bowl and mixer attachment are out of the freezer and your cream nice and cold you shouldnt have a problem with real whip cream.....you can also add about half a packet of vanilla instant pudding mix to add to the stability if you still have a problem....but obviously real whip cream can not stay out nearly as long

I do cakes and for me the longer you let the cream mix in the beater the thicker it gets. Pretty much it depends how long you let it mix, the longer the thicker, mix it less and fluffy it is. For me I have to make it fluffy cause it stays soft longer on the fridges, but bad part out it is it sometimes hard to form the outside of cakes unlike thick cream which is easier to form. Only bad part with thick cream is that it gets very hard in a day or 2, than after it starts to crack .
Pastry pride is very yummy I always use it as a filling with fresh fruit for my cakes never tried it on the outside of my cakes I just might give it a try...great job by the way
OMG! This cake looks so delicious! That shade of blue is going to look beautiful on the wedding cake! Can't wait to see it! I recommend a large scraper (or bench scraper) like they did up there. It' tall enough to get the entire side of a cake in one swoop! It always works like a charm for me. If you don't know which one we're talking about, let me know and I'll e-mail you a link... i think you did a great job. i wish i could find pastry pride or frostin' pride around here...damn south tx! any way you did great the cake looks lucious...save me a piece. next time try using a bench scraper to smooth the sides. just hold it to the cake and turn the cake on a turn table that's how i do it. later--chris
You frosted with whipped cream? Wow! I think it quite dificult to work with it because it is not very stable. You can always add some gelatine to get it more stable and easy to work with.
Hey your cake came out great especially for your first time. I'ts a change from buttercream. I like that blue color you used. The only thing I would suggest is to dip your spatula in room temperature water instead of hot because it might melt it. But thats the best way to smooth it. Great job.

Is the whole cake covered with Pastry Pride ? i ve never tried or seen a Pastry Pride in my life i alway work with butter cream but to be honest i dont like it? I do cakes and for me the longer you let the cream mix in the beater the thicker it gets. Pretty much it depends how long you let it mix, the longer the thicker, mix it less and fluffy it is.
