Yes you can but it will come out a different texture because they have been cooked to a higher temprature in the canning process. If you cook your own it will have a chunkier texture and the flavour will be far superiour.

I usually make it a little smoother, by adding some of the chickpeas cooking water in the mixer. And I don't add any olive oil while blending.
I rather not using coriander, but I think some cumming seeds are essential.
I just finalize by spreading olive oil and paprika over it and enjoy with pita bread or saladas. Just delicious.
