  • the past is not only semolina, its a mix of semolina, sugar sirop, butter, flower water... then they dry the mix and they chop it finely.

  • they generally use the best cheese : camel cheese.

    its very expensive but extremly delicious... like mozarella in 10 times.

  • would you please tell us, how do you make the smeed mix in the first step? What do you mix it with? any butter or milk , what are the steps? Because this is what makes the Knefeh in the first place. Thank you and regards....

    yes it's a lebanese cheese called Akkawi which is similar to Mozzarella

    It's semolina , called "smeed" in arabic , which is a kind of soft bulgour.

  • this kind of Cheese is named ''Naa'ah''

    its a very expensive lebanese cheese. Its like mozzarella but REALLY more delicious.

  • he forgot one thing at the end which is to spray it or put syrup on it otherwise it would just crumple apart. Anybody living in Ottawa, Canada comment back if you wanna eat knefa i might just know the best store that makes it

    ...I so miss knefe , I have been trying to bake this for the last 10 years and i allways fail it. My husband is lebanese and i know this...he will love me even more if he gets knefe.(made by me) :-)

  • @RRRORY1 FOR THE DOUGH: 1 1/4 cup of smeed (farina) hard 1 stick of melted, unsalted butter 2 tbsp. sugar 3/4 tsp. rose water (mai wared) 1 1/4 tsp. orange blossom water (mai zaher) FOR THE FILLING: 3/4 a large piece of sweet cheese, cubed (jebne heloueh) (mozzarella curd) 2 tbsp. smeed 1 1/4 cup milk
  • DOUGH:

    Mix melted butter, smeed, sugar and 2 flavored waters in a bowl. Spread dough in the bottom of a greased 9x13-inch dish.

    FILLING:

    In a pot on low heat, melt the cheese, smeed and milk until melted. Constantly whisking. When melted, pour filling over dough, cover with foil.

    Bake in oven at 375 degrees F for 40 minutes. Keep covered the whole time. To serve don't forget to flip it out of the pan!

    For the ATTAR:

    2 cups sugar

    1 cup water

    1/2 tsp. lemon juice

    1/2 tsp. orange blossom water

    SYRUP:

    Boil water & sugar; after boiling 1 minute add orange water & lemon juice. Pour over hot Knafeh!
