  • I actually bake my potatoes for making twice baked. LOL! I use left over baked potatoes the next day for making hash browns, or a fritata (did I spell that right?) Now I have 2 hockey playing boys and they seem to be eating everything in sight these days (kinda reminds me of locust) but they sometimes leave me leftovers to work with. I am really enjoying these videos. Some are old ideas and some are new. Keep making them.

  • Uhhh.... how many people would have actually thrown them out like you said at the beginning of the video? I don't think many people would have.

  • Sadly I've SEEN it happen.

    Not everyone realizes that prepared food can be recycled (so to speak). We do have a pretty 'disposable' society.

    Just sharing for those who may not have thought to use them.

  • @cruisenadam I always throw out leftover baked potatoes. I don't like leftovers as a rule but this looks like a good idea. I might try it tomorrow.

  • Hi, I have a recipe for leftovers potatoes. It's like a salad but, not the usual potato salad. I take the potatoes, chap them up, yogurt, mayonnese, mint, salt and pepper to taste. I mix the whole thing together. Fresh and yummy.

  • Thanks to you too. It's nice to see that you're always enthusiastic about sharing. One day I'll tell you how to make leftover eggplant, side dish italian style. I usually make them as meat balls, without the meat, of course. We are not vegetarian but, we don't eat much meat. Italy is great for veggies, we have a numerous recipes. Eggplant really go with either mint or basil. They're so good, that my family devour them in a flash. Ciao

  • Sorry but, what about seving energy? Twice baked, means cooked 2 times for 1 item. It doesn't seam to be a saving money. Also, how long do you keep the potatoes in the fridge? Not long, I hope. Anyway, It is a good idea to see ways to save money, especially on food. ciao

  • Good points - but I do bake them along WITH something that is already being baked so no wasted energy there. Unstuffed they stay in the fridge about 1 week. Once stuffed tho, it's good to use right away (dairy and all going bad).

  • a twice baked potato can be frozen too, this way you might be able to save a few and have enough for your son ;o).

  • Oh yeah - we do that a lot with our garden harvest because it doesn't heat up the house like canning does....although I do love to can things too...I'd like an outside oven for that though...keep the heat out!

    Well, we live in the midst of 'nowhere' so the pre-grated is all I can get without driving an hour and a half away. So if it's gonna be melted or mixed in - I'll use that. On ceasar salads and raw meals - shredded IS BY FAR best you're right! (o:
