ive been told he takes off the g string because he uses a lot of open tunings on that 12string

and that string would split up every time he bends the string...makes sense to me....

im not sure what you mean with your 2. question...but i hope i could help

1) he said that the higher pitched g string sounds "weak:" (its the highest pitch on a twelve string) he likes more of a meaty sounds

2) John Butler uses a stomp box.. (its a microphone inside of a wooden box"... he taps his foot to get a drum sound.

thats so that he can bend the G (which is the one he only has 1 of) in that special way only john knows how

Actually, the only reason that he removes that string is because it is the highest note on on a 12 string guitar and he has been quoted in saying that he thinks that it sounds "ugly" to have the highest note in the middle of the guitar...so he removes it.
