Most of these videos show guys w/old, blunt fillet knives. Sloppy. You'd never see a Japanese dude tearing that fish a part like that and I would never eat a fish w/parasites. That is just nasty.
Do you eat some of your fish or sell them? And what do you do with the wast? Throw it back in the water for other fish or use it for bait (: Thanks Greg
The fish are just for our guests, and great eating. We're not allowed to sell our fish by law and not worth it anyhow. Unfortunately we do waste alot of the fish with the frames thrown back in the ocean if possible. Fish wings are great to eat on larger fish, such as big Coral Trout or Red Emperor. Check out the video on Red Emperor fish wings if you get a chance. A bit picky to eat, but absolutely beautiful meat, very sweet and well worth it,

Buy the man a better knife, (victorinox boning knife & Chain-mail glove & a good stone) you are filleting fish not cutting up timber in the shed, a fish that size should only takes 4 strokes with the knife each side & the fillets should just peel off the back bone.
Done it for 6 years on the swains reefs myself, the more fish in the box the better you get.
Definately always pays to have a sharp knife, bit of a rush job on the fillet, had a heap of fish to fillet, in the background which you can't see. Definately top quality knives and even stones for sharpening well worth it,

maybe you should sharpen the knife before you fillet again. some parts looked like he was really sawing away at it.
