She is not singing in any language. It's a form of singing where she just sings sounds, not in any language. Personally I think the first 2 minutes before the chorus kicks in is the best bit, but the whole song is very very good.

It's actually in Hebrew, according to the internet. You can look the lyrics up on google by typing "Gladiator end theme now we are free lyrics" and according to all of the websites, she is singing in Hebrew.

Which is why I find it so beautiful :)
