@bikr0 Nope. I've been doing it this way for many years. Never a problem. The celery remains firm yet cooked ( like steamed vegetables ) and the onion cooks thoroughly in the stuffing.

@DDWLW Ya, I've never been a fan of putting pork ( sausage) into my turkey. However, for a little added flavor and moisture I occasionally add diced apple to the stuffing
