I have painted turtles Chrysemys picta bellii and Chrysemys picta marginata and red-eared sliders Trachemys scripta elegans. The fish in my pond are goldfish -- no koi. I would not mix turtles and koi if you value their fins. My fish were meant as turtle food, but the turtles are not interested in eating them.
I've built Koi ponds at every house I've lived at over the past 30 years, but have never had turtles in my ponds. I'm wondering if you would tell me what kinds of turtles you like in your ponds.
PS I watched your videos about making rocks. I've got to try that!

Thanks for the advice. I have some very prized Koi Some are over 12" long, and would be too big to be eaten, but I would hate to see them get hurt.

Yes, your prized koi would not look good with tails and fins nibbled.
