If it doesn't tend to over-brown, there is no need to turn it. You need to watch it carefully, and if seems to be brown enough after about 4 minutes, you should carefully turn it to let the other side brown for the additional 4 or 5 minutes it needs to cook. The important thing here is to get it done (not over-done), but to have a nice golden (not burned) coating! Thanks for letting me clarify that point!

Catfish is not that popular where I come from, but I am sure I can find some at some larger fresh fish and seafood markets.
