  • Aloha Betty, we don't have the cornmeal/flour mix on Maui. What is the ratio of cornmeal to flour, to baking powder that I need to use to make my own hush puppy mix? Thanks!

  • @mauimom67 You can use 2/3 cup cornmeal and 1/3 cup flour to make one cup of mix. Ad 1 1/2 teaspoons baking powder and 1/2 teaspoon salt to complete 1 cup of self-rising cornmeal mix.

  • I have 2 questions? 1. do you have a video where  you make hushpuppies? what food goes with what oil as far as frying? olive , peanut, canola , safflower, etc

  • @married1959 Yes, just search bettyskitchen for hush puppies--they are great! I usually use peanut oil for frying, because the temperature gets very hot (about 350 degrees F), and that is well below the smoking point of peanut oil.

  • @YoungNMarried When broiling, you normally have the top burner on, and leave the oven door open just a small amount throughout the cooking process. This insures that the burner will stay on. Tilapia is fine for this recipe.

    Like a Cat that ate some Fish.:-) It's actually super-delicious. You can pan-fry or deep-fry them. Try this one. Use a rolling pin and crush some Corn Flakes Cereal. Coat the fish fillets by dabbing them in the flakes. No butter needed...just dry flakes. When fillets float to the top in the cooking oil they are done. Super-diddly-delicious. Tryt it...You'll love it.

  • @0Avey7 This catfish is broiled. For broiling, set your oven to broil (not a specific temperature) and leave the oven door open a slight amount.

    I much prefer broiling fish over pan-frying as well.

    Catfish is not that popular where I come from, but I am sure I can find some at some larger fresh fish and seafood markets.

  • I like fine dinnerware and cutlery for special occasions :D What I have is inherited from my grandparents. It is somewhat high-maintenance, so I only use it for elaborate dinners :)

    I have already had catfish here, a long time ago, when I was a kid. My parents prepared it at the time.

    I have a fishing license, so I can go catch some fresh ones on my own, as they are easily found here in the local rivers. :D

  • I am supposed to go to the countryside this weekend. I will bring my fishing gear. I have cornmeal in my pantry, so this will be an idea for some creativity in the kitchen, should I catch anything.

    One of my mother's hobbies was trying out new recipes at least three times a week. I suppose I inherited this habit from her :) Her experiments almost always turned out well.

  • This is probably the tastiest catfish I've ever eaten! I made this along with your parsley and chive baked potatoes and our whole dinner was just delicious! The fish was flavorful and easy to prepare. I really appreciate all the recipes you post!

  • I think they would be about the same. For this recipe, you may use any type of fish. It is a very easy recipe to do, and for any fish you will only broil it for about 8 to 10 minutes. I hope you get to try it!

  • Yes, and it works for other meats, poultry and fish. You just have to cook them different amounts of time. For poultry and other meats, you should bake at 350 with a closed oven door for about 30 minutes. But, for any type of fish, just do it like this! It's very quick! Thanks for your question!

  • Looks great -- do you turn the fish when broiling or just keep it on one side? Thanks for the recipe =]

  • If it doesn't tend to over-brown, there is no need to turn it. You need to watch it carefully, and if seems to be brown enough after about 4 minutes, you should carefully turn it to let the other side brown for the additional 4 or 5 minutes it needs to cook. The important thing here is to get it done (not over-done), but to have a nice golden (not burned) coating! Thanks for letting me clarify that point!
