There were a few clips released called Gundam Wing Odd and Even that chronicle a few small moments of the pilots after the last battle and include flashbacks over the Gundam series. They're actually available on Youtube, though they were never dubbed or subbed, so you'll have to look in the Youtube descriptions to understand the brief dialogue.

This is one of the best AMV's I seen. It's really well put together and Savage Garden's 'Crash and Burn' just fits perfectly.
