Seconds are good when you are fine dialing in the grinder but from there its all about how you tamp,the flow of the espresso,color of the crema and the test.

Good question. Based on the shot that you want you will need to make some adjustments to your grinder, thus slowing down or speeding up your extraction. Also, typically for a double shot I try and get closer to 25 seconds and for a single, closer to 20 seconds. Happy Brewing!

how are you able to get twice the volume of coffee for a double shot in the same amount of time as a single shot? I don't have a coffee machine so this confuses me! Surely the rate of flow is the same in both cases so per unit of time, shouldn't you get the same volume as well? Thanks.
