Really interesting video! The Dutch Ovens I am familiar with are the sort that sit in front of an open fire and the roast is on a spit, which rotates to get all the sides brown. The meat juice and fat are retained at the bottom of the oven so you can keep basting. However this enclosed system looks better because your turkey is part-steamed which stops the meat from being too dry. Great looking dinner! What size is the Dutch Oven? Sure is a nice one. I have yet to use my Dutch Oven . I think I could fit a cornish hen in it LOL.

@Allen2045 Sorry it took so long to reply. It is a 9qt 14" dutch oven. We have 4 different Dutch Ovens and this is the biggest one.
