It's just because of the aerodynamics. otherwise it will stall or will climb. Because the F50 has a small amount of flap degrees thats the reason. The F70/100 doesn't have slats too and normally doesn't a nosedive ;)
Very good video. With an autoland the hands are kept near to the controls in case of a failure of the automatics near the ground. The landing you refer to is completed automatically and then the A/P is disconnected as it should be in the landing roll. The F100 does provide centreline guidance but there is a performance penalty to apply because the aircraft will use more runway on an autoland than a manual.

no, it just wouldn't descend fast enough, or it could even climb, if it had a more "regular" profile

Kristiandsand is on the DVD but not Stavenger. If you go to the website you'll have the entire list of routes and destinations of this program...
