yeah... makes sense to me... i think she means like... a corn starch water slurry... not sure about the sugar though.. but slurry + soysauce + meat juices can make a sauce type thing in the pan?

there's no salt in soy sauce???? look at the amount of sodium per serving in the nutrition facts! Why do you think that soy sauce is salty without adding salt into it? So you think soy beans are naturally salty??? the reason your meat is not dried only because of the oil you add to marinate it. Oil is hydrophilic and therefore can trap water inside the meat, locking the moisture.

炒既時候係好重要架~最緊要係大火,重有一落獲唔好立即炒~炒完一邊先一邊~唔好郁動太大,封住d肉汁先~兩邊都轉左色~再快炒幾下就ok啦~油...唔使咁多既~少少咪得囉~痴既咩~落咁多食死人啊...
