We're more suited towards serial monogamy.
You suggest that people cannot be committed without being married, and I respectfully but completely disagree. I don't need a document to tell me how I feel about someone, and I certainly think I'm capable of making a long-term commitment without signing said document.
On a practical note, cohabitation lets you see another side of your future (possible) spouse. Citing the difference between friends and family, people form a different dynamic with others when forced to live with them.

What causes part of this disparity is that women tend to have more disrupted work lives than men, with less experience in the field and less experience with the same business for reasons such as having kids. a job & a career are two different things. Your work in the food industry describes a JOB- statistics are polling CAREERS. Anyway- men and women have equal incentive to strive to higher brackets- sociological constraints prevent them from achieving this (my bachelor's was in sociology).
I guess if one was to research the pattern of women in higher positions and pay brackets, I think that you will find that the women who earn more, and have high positions at work, either do not have kids, or are older and their kids no longer require parenting.
