  • the dirt is PROBABLY PEPPER.

  • thats too long for a soft boiled egg, you should start with cool or warm water, then turn the heat up high, put your eggs in and time them from that point. the water should boil fast and for small eggs it should take no more than 3 mins, medium eggs about 4 mins, and large eggs just under 5 mins per egg. any longer and the yolk will begin to harden. P.S. times shown are per individual egg.

  • @amalgamation25 the method you've just described is terribly inconsistent as you have no absolutes, by starting with boiling water then ice bathing you know exactly how long it's cooking every single time, restaurants don't play games with WELL GUESS THIS BATCH DIDN'T TURN OUT AS GOOD AS LAST TIME. the method shown here will yield consistent results, and as anyone who's worked in a kitchen knows, consistency is the key to success. not to mention that 7-8 minutes is perfectly ok as you can see.

  • nice sharing, because i found it really hard to peel a soft-boiled egg before. next i will add some salt and vinegar in the water.

  • Um, a lot of people said to put the eggs in cold water and then boil them. Not directly in boil water.

  • @Harpiieboy Actually, the eggs should be put in warm water, that way the temperature of the egg rises a bit so that the egg shell won't crack during the boiling process.

  • @xphatmexicanx Maybe it could be right what you said, I just said what I heard from the Chow video's How to make Deviled Eggs. The chef said eggs should be put first in the pot, and then cover them with cold water, and bring them to a boil.

  • @Harpiieboy Yeah, that works too. Just as long as they are not taken directly out of the fridge and directly tossed into boiling water, then everything should be fine :P

  • i love soft boiled eggs, but I'm amazed at how long he recommends you should cook the egg to have it soft boiled, in Denmark were we live the rule of thumb is 4-5min. for at soft boil 8-10min. for a hard boil, guess our eggs are just different,, :)

  • @simonwainman Anything less than 5 minutes and the whites are still watery. Maybe it's just that I forget whether I'm boiling large or medium eggs. Anyway, I've decided I like them best poached (on toast) so it's no longer a problem. (until my tastes change again)

  • @nakamine1713 Yeah! I suppose it could be that my water is boiling at the wrong temperature. Maybe my kitchen is just at the wrong altitude. It must take at least half an hour to boil an egg on the top of Mt. Everest. (wonder how long it would take in a pressure cooker?)

  • @glynbrain I was being serious...if you're using salt, or even if you're water is boiling, it doesn't mean that it's at the right temp...if you keep it on high the whole time, of course the water will be boiling, but the temp will continue to rise. try medium, to make it a slow boil.

  • @nakamine1713 My apologies. Apparently adding salt does raise the boiling point of water, but to add 30 grams of salt to 1 litre of water just to raise the boiling point by half a degree Celsius seems wasteful of salt. Doing it for just a couple of eggs, anyway. But I admit it could be practical in a restaurant kitchen where speed is very important.

  • There is a thin white translucent membrane between the shell and the inner egg, its rather unpalatable and quite tough. As the egg ages this membrane breaks down and that is how you peel the shell off easier... Just don't boil new eggs.

    New eggs are better suited for scrambling or meringue dishes.

  • Also the way you prevent the shell from cracking is by putting the eggs in the pan before the water! Jesus fuck some of these comments are stupid.

  • vinegar weakens the shell because the shell is made of calcium... if it breaks with less force the egg takes collateral damage from your pressure towards the shell

  • it probably also weakens/softens/damages the skin between the shell and egg white

  • same reason you put salt when u make noodles, boil potatoes or veggies. water lets the water reach a higher temperature before starting to boil AND evaporate. if the water can take more heat, you cook faster/more

  • i wonder if he cooks the eggs at a full boil for the 8 min.? anyway, i'm sure the condition of the nails are due to dirt from vegetables - mine get that way when I'm handling potatoes or any other root vegetable. also, organic foods are healthier - no pesticides to wreak havoc on your body - timo is going by the one study that came out this year that compared nutrient content only...

  • By the way, organic food has been proven scientifically to contain no more nutrients than that of regular food & to be no more healthy for you than conventional foods. Also, in blind taste tests around the world - organic food has proven to be of a lower quality taste to 9 out of 10 people!

    Go check out Penn&Teller's Bullshit episode on organic foods! All you're doing is paying 25% more for your food to line the pockets of the bastards who use Organic as a way to market foods to make a profit!

  • He was just demonstrating his cooking for Chow, how do you know the eggs were even meant to be consumed? You don't. I'm not saying he got the dirt from the eggs, I'm saying that it may have been from whatever he was working with beforehand, and he didn't wash his hands because it was just a demonstration. You don't know. You're assuming something you cannot possibly know based on no evidence whatsoever, period.

  • You don't know where the dirt came from. It could've come from food he was preparing prior to the demonstration in this video. Remember that it is just a demonstration, the food is likely not for consumption and thus washing his hands isn't needed.

    My point is: You do not know where the dirt came from, you do not know if he's violating food handling procedures, you don't know anything. You're assuming something based on nothing, period.
