  • I remember making these when I was a kid but when the "pancake" is cooking, we used these black little seeds and dropped a pinch over the top of the wet side while the other was cooking and then flipped them over. Do you know what those were and if so, why don't you use them too?

  • @luxxjunkie , the black seeds are "Nigella seeds". i am not sure how to use it while you are cooking it because when cooking this type of pancakes you do not flip it, it cooks only on one side until the bubbles on the top side burst. i guess when they are filled with nuts or cheese you may sprinkle some Nigella seeds on them before baking. good luck if you try them.

  • @shangaize , You can make the dough and cook it then fill it with any filling then you will be able to freeze them for about 3 months. when cooking them, all you have to do is place them in the baking sheet and bake them. You can also fry them right away when you take them out of the freezer. good luck.

  • @cookingtheeasyway why they do not serve them in restaurants. They looks delicious. I do not like any of the pastries they serve in middle eastern restaurant other than Knafa when well prepared but still these babies looks way better than everything I ve seen in middle eastern sweets

  • @Ritabellydance , these sweets are specialty sweets that are made only during the holy month of Ramadan. but if you learn the recipe, you can always make them all year round. also, most of the Qatayief that is already made at sweet shops are usually very sweet you would not be able to taste the filling...so better to make them at home. good luck!

  • @MrAhmed62 , you can put the filling in phyllo dough, but the results will not be the same. As a matter of fact, i filled phyllo dough with the same walnut mix and sugar, baked it and then poured sugar syrup on it, it came out great. also i have done it with cheese too and the results were very delicious.

  • @firedylan , Middle Eastern sweets are VERY sweet...most of them are drenched with sugar syrup! check out the other videos i have of Arabic sweets...most of them are dipped or covered in sugar syrup but they are delicious! :)

  • i think you can substitute for 3akkawi cheese by using half ricotta cheese and half mozzarella cheese...this should work out well with this dessert. the cheeses are not salty and they work well with middle eastern desserts. You may try with any other cheese as long as it melts and it is not salty. good luck.

  • I have tried this recipe using ricotta cheese,However I first dried it out a bit using paper towels on the bottom of the bowl first then the ricotta on top and I used brown sugar instead to sweeten it up. I'll tell ya, finding 3ackawee in Alberta Canada is like fishing in a well. you just arn't going to find the fish there

  • Hello mimi, Thank you for sharing your wonderful recipes, your videos have helped newly wedded expats to have decent meals :P I made Qatayef today, but the dough doesnt look like yours at all, the pancakes are dense and not light nor airy , although I followed your recipe exactly, do you know what could be the problem ? :(

  • Thanks for your nice comment! Sorry the recipe did not work out for you...it is all about practice..i am sure when you make again it will turn out better than the first time. I think you need to know your pan temp, the right moment to pour the dough and the amount of the dough too, too much will make it doughy and not fulffy....best of luck!

  • Your videos are great. Your ataif are perfect! My dad's family are Sephardic Jews. We make the cheese ones for Shavuot and the walnut ataif for hanukkah. For the ones with cheese i use rose water syrup and for the walnuts orange flower syrup. But they never look as nice as yours or my sitto's did-lol. God bless your hands!

  • Nice, baking it is so much easier and helathier than frying it, because sometimes they fall apart when you fry it, leaving a mess in the oil, as I have tried experienced. Try adding a bit of crushed cardamon in the syrup you dip or pour ion them, gives it a good aroma.

  • Thanks bendoura for the additional information about frying vs baking and the addition of cardamom...but i usually add orange blossom water to the syrup and makes it great. :)

  • ZaraQa, the recipe is listed on the video for you to make it...so you can do it at home. i am not sure which part of the states you live in but you can find it in some sweet stores especially around the time of Ramadan. good luck.

  • cometkatt, in the USA, you can get this type of cheese that is called "Akkawi" at any middle eastern store that has products of Lebanon. if you cannot find it, you may use a mix of Ricotta cheese and a little bit of Mozzarella cheese. hope it works out for you.

    i think the reason your cheese came out is because you over stuffed it! or maybe let it cook for too long in the oven. could be any reason.

    the red stuff that they put on sweets is Orange Flowers, they are picked as flowers and made into a jam, cooked with sugar and then preserved in jars and used on sweets, they are delicious.

  • I've never tried these before. I'm curious as to how you cook the pancake. Do you cook it in a small fry pan with the lid on?? How do you get the bubbles on the pancake. Also can you put meat mixture in and serve it with a yoghurt dip?Can you show a demo on how to cook the pancakes.My husband is egyptian and he loves middle eastern food. I want to try this. Thanks.

  • nupps, the way to cook these is in a frying pan or a hot surface, just like pancakes or crepes. you cook on one side only not on both and this is how you get the bubbles on the top. traditinally, they are filled with sweet stuff but of course you can fill them with anything you want! meat would be ok , you may fry or bake them and serve them with salad or yogurt on the side. one of these days i will make a demo video of how to make them so it will be easier for you to see.

  • Those look really delicious!! I love pancakes!! Can you make those the night before and have them ready to go in the morning?? It looks like something I could eat while I'm walking to work. I know that's not proper, but hey, I'd have a good, nutritious breakfast!! :-)

  • snowmountain2007,you can make them, fill them, cook them and leave them in the fridge overnight in a covered tupperware it would be no problem at all, you can still eat them the next morning for breakfast or even snack...why not? its your food and no one has to say anything about it! enjkoy!

  • 215081, I have never tried it with Bisquick or pancake batter, but i think it will not work out...unless you would like to try and let me know of the results? i think if you use the pancake batter the qatayif will not close together. but it is worth the try i think :)

    there are no silly questions when it comes to cooking!!! so ask all you want. :)

    i just use regular white flour the one i use for cake, pizza and bread, nothing fancy. i am not sure if you can use any other type of flour, but i would experiment with others and watch out for good results!

  • My husband says that these pancakes are also filled using milk fat. Milk fat isn't available in western markets I suppose for the fact it's pure cholesterol. It's my husband's favorite. He used to eat it like thick yogurt in the mornings, but I don't let him eat it anymore.

  • it is usually filled with fresh cream, the kind you get by boiling full fat milk and skimming it. this is called "Qesht" or "Qaymar" in Arabic . it is usually eaten in the middle east at breakfast or as a dessert with honey. it is pure cholesterol for sure, i would not eat it either!

    and, i thought you were already married...why would you want to marry a pancake? ;)

  • yank,you can do them, let them completely cool,than put them in the freezer the same day, when it's ready, take them out for a few hours before and bake them for a few min.Don't use a microwave,bake them in a oven.

  • we call it in Morocco 'BAGHRIR',you chould eat them the same day. you can not keep them in the fridge for long time,at the latest the next day.

  • i have a questions! plz someone answer ASAP! i decided to have my group make atayef for our class cooking international foods project and we finished them and finished the syrup and we did them on wednesday but will eat them the next tuesday and im worried that they will ruin.. i was wondering if my teacher should freeze them or refrigerate them for the rest of those days and if any of those work, what should we do after.. bake them in the oven?

  • you should use them the same day , maybe the next day, but you may freeze them and use them later.

  • and after i take them out of the freezer.. should i bake them in the oven for about 10 minutes? to make them warm again under about 180 degrees? what do you think?

  • i hope you got my reply to your question. you are correct, you can bake them in a preheated oven for about 10-12 minutes. remember, when you freeze them they should be raw, not cooked at all!
