Trying to steal the ball here leads to careless fouls. Instead, when the trap is set correctly, the player with the ball will be forced to make a slower, poorer pass which can be stolen by the other defenders. Trappers stop and contain the ball, the other 3 players look to intercept - - stealing easier, odds of fouling less.

You can drop back to zone. The trap is an attempt to get a steal, it is not gonna happen most of the time, you use it sparingly. You will simply drop back and play your usual defensive scheme, a zone or man to man.
