if the comet's speed was constant (without acceleration) - yes - line would be the same as you show. But at the perihelion speed is much greater then in the "left upper corner of your image" - so comet's enertia will change exiting angle. so centrifugal force pushes object away from center - it's what happening here. YEs of course sun does not switch her's gravity off - if it was "switched off" comet would just fly straight ahead without changing direction at all.
