I really appreciate what you are doing and I know you mean well. A little comment that helps from a music major. When you use modulation there is something called enharmonic names.. B has 5 sharps now.. Because in the key of B there aren't any flats. .So now the 2nd modulation should be named E-G#-B-D# and not E-A flat-B-E-flat as you said it. Thanks for what you are doing.

"C / G Bb C Eb" Is the Cm7 chord because it contains the root (C),

the minor 3rd (Eb),

the 5th (G),

and the minor 7th tone (Eb).
