This beautiful instrument is called the Hammer Dulcimer. It has a cousin called the Lap/Mountain Dulcimer but that one has way less strings and is fretted like a guitar. They are only related by name. This one is set apart then by the fact that you strike it with little wooden hammers like a piano.

According to the Yeshuat Yisrael haggadah, it comes from the Shira-Pesach (Passover song) "Eliyahu HaNavi" ("Elijah the Prophet"). The melody for it and "Come Thou Fount" always stuck me, and now I know why- I didn't know when I was being raised as a supposed gentile.
WOW! This is one of my favorite hymns (The Catholic Church calls this song Love Divine All Loves Excelling) If I could learn your version it would make for an awesome prelude or postlude to mass.
