  • @phr1sk37 I won't have time to film a salmon smoking episode. It will take me too much time which I do not have of right now due to professional reasons. I dry brine mine in a mixture of 3 cups brown sugar to 1 cup coarse salt, then smoke until done. I may do a video on smoked chum salmon come November. Stay tuned.

  • @liquidz604 I put the fish and brine in the fridge overnight, sometimes longer. some people make more complicated brines, i dont. i prefer the flavour of the salt, fish, sugar and smoke to be the focus. some add ginger, garlic, cayene, pepper etc. also some baste with maple syup for a sweeter glaze. Cameras I use are a Sanyo Xacti VPC-cg21 and a GoPro Hero HD.
