The water fall is not only attractive, but the run down the corrugations perfectly cools the water for recycling through the engine (to cool the hot end), and also demonstrates the engine's original function as a water pump.
It's quite a wonderful engine--such stirlings are the most interesting of heat engines on a number of counts, imo.
