  • I've noticed he varies the colour of the flames he uses to cook with. Is he adjusting the air opening on the gas burner to do this? WHat would the reasons be for cooking some dishes with a yellow flame and some dishes a blue flame. I'm guessing it is to do with the amount of heat dishes require

  • Can anybody who speaks or reads Chinese tell me what the reddish liquid is in the middle of the screen at :49 seconds into the video. I am thinking it is either a cooking wine of some sort or a spicy sauce of some kind. It looks like the final ingredient that the cook drizzled in at the very end. Thanks in advance.

  • I have seen many cooking videos on Youtube. This series, although in Chinese and hard to follow, is very authentic. We would be well served to decipher as much as possible and learn from it. Of course, the chefs always have the best equipment. That nuclear burner is to die for.

  • Process: 1. Finely slice up bamboo shoots and ginger. 2. Roughly slice challots. 3. Marinate wings in soya sauce. 4. Deep fry the wings in hot oil. 5. When the wings are golden brown, drain away the oil. 6. Fry the ginger and challots. 7. Add stock (they didn't say what kind). 8. Add soya sauce, MSG, salt and sugar to the stock. 9. Then add the wings in. 10. After 30mins, put the wings into a claypot. 11. Garnish with bamboo shoots and mushroom. 12. Pour the sauce over.
  • Ingredients by appearance: - Mid-joint of wings - 20g Bamboo shoots - 20g Shitake Mushrooms - 50g Soya sauce - Cooking wine - Ginger - Challots - Monosodium Glutamate (MSG) - Salt - 50g Sugar
