Though as he explains in the video, especially as this is for the home cook, many restaurants serve dishes with small amounts of garnish that look pretty, but what they add to the dish is gone halfway through eating it.

Pierre's are often to busy.. or even too simple. was expecting more ballance and finesse from this guy.
