I flew this route a few months ago, and the pilot did say we were cruising at 40,000 feet. Those 73's can really climb fast, or else the plane wouldn't have gotten down in time!
These 737-700's will fly at 40,000. In fact, by law, the maximum altitude a 737-700 is allowed to fly at is 41,000 feet, that's the same for the -800 too.

Whether or not there is turbulence on a guided flight path approach has nothing to do with the pilots. But I do agree with you that it's a nice flight :o)
All airlines like to conserve fuel. My mom's friend flies the same exact type of plane as this (Boeing 737-700), except it's for AirTran, not Southwest, and he flies usually at 40-41,000 feet to conserve fuel just like you said. The higher you fly, the more fuel you conserve because the air is thinner the higher up you get. So it's not just Southwest who climbs high to conserve fuel.

I heard the 737-300 can climb 37,000 feet in 19 minutes. so yea they do climb fast.

i know it does, but they will fly at either 36000, 38000, or 40000 feet on this flight. you can look it up.
