At good steak houses, they refuse to cook anything over medium...aged beef get's dry. The sugar formed in the meat would be loss if cooked to much. Gordon is right, aged quality beef needs to be served rare...especially that rare on aged meat is not like rare on fresh meat (much less blood in aged meat).

Gordon has a lot of haters now, as many successful people do. The fact is, he's one of the most famous and successful chefs in the world. Not only in name recognition, but in the quality of his restaurants-He has restaurants all over the world that have collectively earned over a dozen Michelin stars. Not only that, but he truly loves cooking and sharing his enthusiasm with the world. That's commendable for a person in any field.
It sounds like a lot of people commenting don't know how to eat steak. Go to a real, full service restaurant famous for steak and you'll learn, either by reading the menu or being told by the waiter: If you order it well done, there are no returns and it cannot be replaced. Meat can always be cooked further, but once it's dried up and burnt, or "well" as a lot of you probably order it, the cut of meat cannot be exchanged. Obvious, yes, but often people's view of done is different.
Then don't fucking eat a steak. End of discussion. Also, no sane food critic would ever in their life, even at gunpoint, order anything beef well done.

Go to a real, full service restaurant famous for steak and you'll learn, either by reading the menu or being told by the waiter: If you order it well done, there are no returns and it cannot be replaced. Meat can always be cooked further, but once it's dried up and burnt, or "well" as a lot of you probably order it, the cut of meat cannot be exchanged. Obvious, yes, but often people's view of done is different.

If you dont like red meat then don't eat steak. Eat braised meat.
Cooking beef makes it tough. The proteins stiffen up and dry out locked in shape.
There is no such thing as an "Overdone well done steak".
Cook steak anywhere past medium and it's overdone and will start becoming tough.
Smart people know beef is sterile on the inside anyway. What's the problem with a little blood?
If there's marbling, cook it medium rare. Tender w no marbling, cook that beast blue. Should still moo on the plate.

I think Gordon Ramsay is a completely overrated chef and I haven't even tried his food yet. I do have to defend him in this situation though. Anyone who orders a steak well done is an amateur and if you order one and mention that its tough or dry then you are an idiot as well. Any meat that is cooked till its brown throughout is going to be dry unless you poach it in butter or something ridiculous. This guy is not a real food critic, he's a clown.
