Actually these appear to be "Asian Carp", specifically silver carp (flying carp). They usually get spooked when the water around them is disturbed, for example: your boat and motor can cause the school to become airborne in a similar fashion to this video. White Amur or aka- grass carp usually do not school up or display such characteristics as the silver carp do.
This display is very indicative to this species (Silver Carp) and does happen quite often in any water body that is connected to the Mississippi River. These fish are an invasive species and are putting a terrible strain on any water bodies’ ecosystem that they get introduced into. The best action here would have been to remove as many as possible by all legal means.

@mooneyd1 They were White Amur and maybe some drum.And it wasn't a gar that scared them. They were excited because of the rushing water.
