I thought that was a fairly accurate impersonation myself! I say the exact same when people ask me to speak some Gaelic. I only remember drips and drabs so start off with that and merge it into the same sort of mutterings you did and it works everytime!
We definitely do speak too fast, especially amongst ourselves and being quite well travelled I can testify that people often do find us difficult to understand, especially if English is their 2nd language.
First of all, there are many different Irish accents - Dooblin, Cork bye, Cyaaavan, Durry, etc. I'm Irish and I find some of the regional accents difficult to understand. And yes - many of us do speak too quickly.
