4 pounds of pork belly, cut into 1-pound pieces

4 cups of kosher salt

3 1/4 cups of sugar

3/4 cups of brown sugar

3/4 teaspoon of curing salt (not table salt)

mix the salts and sugar and bury the meat in it in a fridge for about two weeks. Remove the meat from the salt mixture and rinse. Pat dry and place on a cake rack, then fridgerate overnight. Smoke low and slow at 140° for an hour and then you can refridgerate or freeze. Good luck!

@iamafractal I actually tried to find information on not using curing salt(Sodium Nitrate) but apparently it's for keeping the botulism down and not killing you. If you find a completely organic way to do it please message me and let me know. We've been using curing salt for years and I'm looking for an organic method myself. Thank you.

Sodium Nitrite will kill you just as nicely as it kills the botulism. some scientists have said even one serving of meat with it is enough to do permanent damage to your body. They've been using just salt for thousands of years and that works pretty nicely, so i'm going to say i think that's probably just fine, in my personal opinion... but that's just my opinion and not necessarily that of anybody who knows much about anything ;-)
