I thought this was it.

I don't know what it causes it, but the same happened to a deer for me. I soul captured it and used Ice Form so it wouldn't run away. Afterwards, it started doing this but the angles it moved were alot weirder and it did it alot faster; as in it's head was going through it's stomach and it moved alot more.

Finally, it took off towards the moon before I gave up trying to kill it for the soul.
