The coffee (a time-tested antidote to drunkenness) symbolizes that poor guy's only hope for sobriety and a decent life. The money (the root of all evil and all that) symbolizes the shiny, seductive comfort of a drunken oblivion. Our boy Blaine feels compelled to drain away the coffee (i.e. "hope") and replace it with money (i.e. "misery"). Wow. What a great trick.
