That's in episode 4x12 'Butterflied'. Grissom is talking to the suspect dr. Lurie. It's really a great episode! It still makes my skin crawl!

I think they became a couple in episode

5x21 'Committed'. Grissom was so afraid of losing Sara because of the attack by Adam. I think the told her then he loved her. But that's my opinion!
