i can tell youwhy the volume goes up and down... cause if you notice it goes up when your showing the "stumming" (actually picking)

if you know how an acoustic works the soundwaves go into the hollow part of the guitar via the hole.... echos around the inside then magnifies the sound... there for when that hole is close to the camara it picks it up louder cause the sound source is close to the mic...
